The perfect Gyuto IWY-9005 from Ittetsu knife with a 21 cm blade for any task in the kitchen. Black handle is made from pakkawood. The blade is made of Sandvik 19C27, Hammer finnish. Sandvik steel, also known as Swedish steel, is popular with knife makers from all over the world. They are characterized by high hardenability and good cutting edge stability, but are very easy and quick to sharpen. This knife cannot be washed in the dishwasher. Hand wash with warm water and towel dry. Japanese kitchen knives have a very hard but thin blade. Japanese knives are not allowed to cut bones and meat with bones, coconuts and other nuts, and other hard foods. Ittetsu knives are handcrafted in Echizen, Japan by various master blacksmiths. The knife blades are made of three-layer steel with an inner layer of Shirogi and are hardened to approximately 60 HRC. The octagonal grips are made of walnut and equipped with a pakka wood clip. The Kurouchi finish makes the knives look classically Japanese and a little more rustic.
