Sandvik steel, also known as Swedish steel, is popular with knife makers from all over the world. They are characterized by high hardenability and good cutting edge stability, but are very easy and quick to sharpen. This knife cannot be washed in the dishwasher. Ittetsu knives are handcrafted in Echizen, Japan by various master blacksmiths. The knife blades are made of three-layer steel with an inner layer of Shirogi and are hardened to approximately 60 HRC. The octagonal grips are made of walnut and equipped with a pakka wood clip. The Kurouchi finish makes the knives look classically Japanese and a little more rustic. The sharpness and stability of the blade is excellent, so the good value for money of these high quality knives should be emphasized.
