Nakiri Japanese kitchen knife Kajibe Shirogami KJB-007 16.5cm
New
Nakiri Kitchen knife Kajibe Shirogami 16.5cm KJB-007
The Japanese Kajibe nakiri knife is designed for chopping vegetables and other foods. The handle is made of walnut wood. The blade is crafted from three layers of steel with a core of Shirogami No. 2 steel and soft iron facings. Kajibe knives are hand-forged by master blacksmith Kunio Ishikawa and his son in the Japanese city of Sanjo. Please note that Japanese kitchen knives have a very hard but thin cutting edge. These knives should not be used for cutting hard foods. The nakiri is not a kitchen cleaver and should only be used for soft foods. Since both the core and facings are made of steels that are not corrosion-resistant, please hand-wash the knife immediately after use and wipe dry.

Gyuto Japanese kitchen knife Kajibe KJB-006 24cm
New
Gyuto Kitchen knife Kajibe 24cm KJB-006
The Japanese Kajibee chef's knife has a 24 cm blade. The blade is hand-forged using the San Mai method: the core is made of Shirogami (White #2) carbon steel with a hardness of 62–63 HRC, and the outside is covered with layers of stainless steel. The blade has a Kurouchi finish, a traditional dark coating. The blade is 240 mm long, 55 mm high, and 4.6 mm thick. The octagonal handle is made of walnut with a Macassar ebony bolster. The knife weighs approximately 220 g. This knife is not dishwasher safe: wash it and dry it thoroughly by hand immediately. The blade core is made of carbon steel, so rust may occur if not dried in a timely manner. This rust should be removed, and with proper care, a natural protective patina will form on the blade's surface over time.

Tactical knife Böker Grabendolch Trench Knife 121918 14.4cm
-11% New
Fixed blade Knife Böker Grabendolch Trench Knife 14.4cm 121918
During the positional war during the First World War and the resulting trench warfare, many of the insufficiently equipped soldiers developed auxiliary weapons, which were manufactured in field forges and workshops on and behind the front. In the course of the battles, however, it became clear that the soldiers' equipment and armament did not meet the requirements of this particular fighting style. In 1915 Boker was therefore commissioned by the Ministry of War to develop a compact combat knife that was ideally suited for precisely this purpose. The true-to-the-original Boker Trench Knife also has a stainless steel blade made of C75. This carbon steel with an enormous edge retention requires appropriate care today as it did then. The massive stainless steel crossguard, the old official tang stamp on the blade, the ribbed wood handle and the authentic sheath made of high-quality leather are also part of the original equipment. The knives are marked with a serial number.

Kiritsuke Japanese kitchen knife Seki Kanetsugu Zuiun 9305 21cm
New
Kiritsuke Kitchen knife Seki Kanetsugu Zuiun 21cm 9305
Seki Kanetsugu Zuiun Kiritsuke 21 cm. Kiritsuke bocho combines the qualities of “usu-ba” (thin-bladed) and “yanagi-ba” (thin- and long-bladed) knives. But it is crafted to be double edged as opposed to conventional single-edged ones, making it suitable for cutting any type of food by bringing the blade straight down onto the item. As the pointed part of the blade is modeled after a sword, it is also suitable for preparing dishes that involve techniques requiring the use of the tip, such as decorative cutting. The Zuiun is a special model manufactured to celebrate the company's centennial. Seki Kanetsugu Zuiun knives have blades with a wavy “hamon” pattern similar to Japanese swords. In its current incarnation, Seki Kanetsugu Cutlery has been making modern blades that realize the characteristics of Japanese swords--unbreakable, unbending and very sharp. The company also infused the Zuiun with the spirit of such swords. The blade is made of Damascus steel that uses powdered stainless steel SPG2 for the core material. Finely sharpened by artisans, the surface of the blade features a scudding cloud-like pattern. It is also forged into a V-shaped "hamaguri-ba" clam blade, reflecting a characteristic of Japanese swords.
