Les couteaux Laguiole sont fabriqués dans la province du sud-ouest de l'Aveyron en France depuis le XIXe siècle. Son prédécesseur, le "Capuchadou", était forgé avec une lame fixe et immobile. Après le développement d'un mécanisme de pliage unique par le forgeron Pierre-Jean Calmels, la lame a ensuite pu se replier dans son manche, ce qui a conduit à la création du couteau pliant, ou canif. Cependant, ce magnifique canif courbé ne vient pas de France, mais de l'Espagne du XVIIe siècle, où il était appelé en espagnol original "navaja". Presque tout le monde, homme ou femme, jeune ou vieux, portait ces couteaux en tout temps. À cette époque troublée, il était utilisé à la fois comme outil polyvalent et comme arme. De jeunes artisans français de la région d'Aubrac, qui avaient voyagé à travers l'Andalousie pour perfectionner leurs compétences, ont vu ces couteaux inhabituels et ont étudié l'art de leur fabrication. Forts de cette nouvelle connaissance et de cette compétence, ils sont retournés dans leur pays d'origine où ils ont continué à développer le couteau. De magnifiques sculptures de mouches et d'abeilles ont été forgées dans les couteaux, et le fourreau a reçu la soi-disant "croix du berger", fabriquée à partir de clous métalliques. Étant bien supérieurs au vieux Capuchadou, ces couteaux sont rapidement devenus l'outil de choix des bergers lors de leurs voyages solitaires. Ils plantaient même les couteaux dans le sol ou les racines des arbres quand ils voulaient prier ! L'incroyable savoir-faire, la netteté remarquable de la lame et la qualité extraordinaire des matériaux utilisés contribuent tous au statut légendaire de ces couteaux et sont considérés comme un bien culturel unique de la France. Personne qui a possédé un tel couteau ne voudra jamais utiliser un autre!
