Le couteau de chef japonais haut de gamme NMF-6415 est un chef-d'œuvre de l'artisanat coutelier, façonné par Naoki Mazaki, l'un des forgerons contemporains les plus accomplis du Pays du Soleil Levant. Ce couteau signature incarne l'harmonie entre les traditions ancestrales de la forge japonaise et la fonctionnalité irréprochable requise dans une cuisine professionnelle. Sa lame de 24 centimètres est une véritable symphonie d'acier multicouche, avec l'acier Aogami en son cœur. Cet acier japonais légendaire à haute teneur en carbone est réputé pour son tranchant exceptionnel et sa capacité à atteindre une netteté rasoir. La structure multicouche confère non seulement une résistance exceptionnelle à la lame, mais crée également un motif unique et inimitable à sa surface, rendant chaque pièce unique. Masaki-san, a blacksmith from Sanjo, is relatively young, he hails from the island of Hokkaido. A young man with no definite direction in life, he set off on his motorcycle across Japan. When he stayed in Sanjo, he was fascinated by the local blacksmithing and knife business. After about five years of apprenticeship with Yoshikane, he decided that he would prefer a more traditional, practical approach to creating knives.
Masaki-san prefers to use the more traditional Shirogami #2 to make his knives, and he often finishes many of his blades, giving them a rustic look. Shirogami has incredible cutting edge durability and sharpness.
