Los cuchillos japoneses de acero azul Aogami son muy valorados por su excepcional filo y durabilidad. El acero Aogami (Blue Paper Steel) fue desarrollado por Hitachi Metals y se considera uno de los mejores aceros al carbono utilizados en la fabricación de cuchillos japoneses. El nombre “Aogami” proviene del papel azul en el que el fabricante envuelve tradicionalmente los lingotes de acero.

Existen varias variantes de este acero: Aogami #1, Aogami #2 y Aogami Super. Aogami #1 (Blue Steel No.1) tiene el mayor contenido de carbono (aproximadamente 1,25–1,35 %), lo que le permite alcanzar una dureza máxima y una resistencia al desgaste excepcional. Aogami #2 (Blue Steel No.2) es la variedad más equilibrada y popular. Contiene un alto nivel de carbono (aproximadamente 1,05–1,15 %) y está aleado con cromo y tungsteno, lo que facilita el afilado. Aogami Super (Super Blue Steel) añade molibdeno y vanadio a la base de alto carbono junto con cromo y tungsteno. Estos elementos adicionales permiten que Aogami Super mantenga su filo durante mucho tiempo sin desafilarse. Se considera un acero premium que combina lo mejor: filo excepcional, alta dureza y gran durabilidad del filo.

Es importante recordar que los cuchillos de acero Aogami requieren cuidados especiales. Al ser acero al carbono, son propensos a la corrosión. Los cuchillos japoneses de Aogami no deben lavarse en lavavajillas. Después de cada uso, deben lavarse a mano, secarse completamente y, ocasionalmente, aplicarse aceite de camelia para protegerlos de la oxidación. Los cuchillos Aogami son considerados, con razón, entre los mejores cuchillos de cocina del mundo.
