Les couteaux japonais en acier bleu Aogami sont très appréciés pour leur tranchant exceptionnel et leur durabilité. L’acier Aogami (Blue Paper Steel) a été développé par Hitachi Metals et est considéré comme l’un des meilleurs aciers à haute teneur en carbone utilisés pour la fabrication des couteaux japonais. Le nom « Aogami » provient du papier bleu dans lequel le fabricant emballe traditionnellement les lingots d’acier.

Il existe plusieurs variantes de cet acier : Aogami #1, Aogami #2 et Aogami Super. Aogami #1 (Blue Steel No.1) possède la teneur en carbone la plus élevée (environ 1,25–1,35 %), ce qui lui permet d’atteindre une dureté maximale et une résistance exceptionnelle à l’usure. Aogami #2 (Blue Steel No.2) est la variété la plus équilibrée et la plus populaire. Elle contient une teneur élevée en carbone (environ 1,05–1,15 %) et est alliée au chrome et au tungstène, ce qui facilite l’affûtage. Aogami Super (Super Blue Steel) ajoute du molybdène et du vanadium à la base en acier à haute teneur en carbone, ainsi que du chrome et du tungstène. Ces éléments supplémentaires permettent à l’Aogami Super de conserver son tranchant très longtemps. Il est considéré comme un acier premium, combinant tranchant exceptionnel, haute dureté et excellente tenue du fil.

Il est important de rappeler que les couteaux en acier Aogami nécessitent un entretien particulier. Étant donné qu’il s’agit d’un acier au carbone, il est sujet à la corrosion. Les couteaux japonais en Aogami ne doivent pas être lavés au lave-vaisselle. Après chaque utilisation, ils doivent être lavés à la main, séchés soigneusement et traités occasionnellement avec de l’huile de camélia pour les protéger de la rouille. Les couteaux Aogami sont à juste titre considérés comme parmi les meilleurs couteaux de cuisine au monde.
