Un cuchillo de camarero es un cuchillo con el que se puede abrir una botella de vino. Es posible que conozca mejor este cuchillo con el nombre de cuchillo de sommelier. Los sacacorchos (también llamados cuchillos de sommelier), se utilizan en todo el mundo por su práctico y elegante diseño.
Los cuchillos dentados se han popularizado recientemente. La principal diferencia se encuentra en el tipo de filo. Un filo liso produce el llamado corte de empuje, mientras que una hoja dentada deja un corte de tracción.
Los cuchillos Trapper pueden tener una o varias hojas. El nombre viene de la palabra trampa. Trapper recibe su nombre del consumidor para el que fue diseñado. Debido a sus hojas básicas para atrapar y desollar y su peso liviano, es un cuchillo imprescindible para aquellos que atrapan caza menor. Una navaja automática o cuchillo automático es un tipo de navaja, con una hoja que se puede desplegar rápidamente. Como en el caso de un cuchillo plegable, en la posición de reposo, la hoja se encuentra dentro del mango (que hace de "vaina"), pero con solo presionar un mecanismo, generalmente botón, un gozne hace que la hoja salga con gran rapidez hasta llegar a la posición típica de funcionamiento de una hoja de cuchillo estándar, donde queda enclavada. Estas son especialmente recomendables porque pueden activarse de forma simple y automática, para tenerlas listas para usar de un segundo a otro.
Balisong, también conocido como cuchillo de mariposa, es un tipo de cuchillo de bolsillo plegable. Su característica es el diseño, en el que, en un estado cerrado, la hoja se encuentra entre dos mangos. Según la versión principal, el cuchillo de mariposa fue acuñado en Filipinas y su nombre "Balisong" proviene del nombre de uno de los pueblos filipinos. Sin embargo, se produjeron diseños similares en Francia. Su nombre coloquial es un cuchillo de mariposa, que recibió de la trayectoria del movimiento de los mangos cuando se abre, que se asemeja al movimiento giratorio de las alas de una mariposa. Los balisongs ganaron gran popularidad después de la segunda guerra mundial: los militares estadounidenses trajeron cuchillos exóticos de Filipinas.
Los mangos de Balisong giran en direcciones opuestas alrededor del vástago. Gracias a esto, el cuchillo se puede "girar", realizando trucos. Esto se llama "flipping". Columbia River Knife & Tool® and noted knife designer Ken Onion are proud to introduce their first collaboration together, the Ripple™ K405 folding knife series. This knife is noteworthy for its exceptional manufacturing quality, premium stainless steel build, plus an almost unbelievable silky smooth and fast opening action thanks to the use of the IKBS internal knife ball-bearing system. The modified drop point blade has a high hollow grind, swedged top edge, and a high satin finish. Steel is premium Acuto, stainless, noted for its high chromium and molybdenum content and hardness of 59-60 HRC. It is instantly opened by pressing the blade flipper with either hand. For safety while closed, the blade has a ball detent. Even the best conventional blade pivot bearings have some degree of friction which resists initial movement, or "stiction." In contrast, the Ripple blade opening action is almost friction-free due to the IKBS ball-bearing system. This innovative and simple design places eight uncaged ball bearings on each side of the blade pivot in races which are machined into the stainless steel handle. It is compact and adjustable at the blade pivot screw if ever needed. Not only is opening and closing exceptionally smooth, the IKBS system is durable and requires little maintenance, and yields a folder with great rigidity and no blade play. The Ripple K405BX models are frame lock open build knives with stainless steel frames. In typical Ken Onion attention to detail, the frame lock does not create an unsightly gap in the right frame, but its cut is neatly integrated into the grip design of the frame, which is CNC machined with a complex "ripple" textured pattern plus 44 small lightening holes. The Ripple™ K405KXP and S receive a black titanium nitride coating, which we then hand buff to give a pocket worn look, that is to lightly reveal the underlying stainless steel on the high points. The Ripple™ K405KXP has a Razor-Sharp cutting edge, while the K405KXS features a combined Razor-Sharp and Triple-Point™ serrated cutting edge. Both models feature a removable stainless steel mirror-polished pocket clip, high-mounted, and also with small CNC-drilled holes. This knife combines brilliant design, custom knife quality, and advanced manufacturing technology in true Ken Onion fashion.
