Tojiro è stata fondata nel 1955 a Tsubame-Sanjo, nella prefettura di Niigata, in Giappone, con il nome di Fujitora. La storia dei coltelli TOJIRO inizia con un coltello da frutta in acciaio inossidabile. A quel tempo, le lame in acciaio inossidabile erano considerate in Giappone non sufficientemente affilate rispetto a quelle in acciaio al carbonio. Pertanto, TOJIRO si è concentrata sulle proprietà di taglio dei coltelli, dando vita al suo slogan "Più che semplice affilatura".

Nel 2000, il marchio ha ufficialmente cambiato nome in Tojiro, concentrandosi sulla produzione di coltelli da cucina di livello mondiale. Poiché la fabbrica si trova in una regione storicamente un centro di lavorazione dei metalli, TOJIRO valorizza la tradizione. L'azienda combina antiche tecnologie di forgiatura a mano con moderni metodi di lavorazione dell'acciaio.
