Tojiro a été fondée en 1955 à Tsubame-Sanjo, dans la préfecture de Niigata, au Japon, sous le nom de Fujitora. L'histoire des couteaux TOJIRO a débuté avec un couteau à fruits en acier inoxydable. À cette époque, les lames en acier inoxydable étaient considérées comme moins tranchantes au Japon que celles en acier au carbone.
