Tojiro a été fondée en 1955 à Tsubame-Sanjo, dans la préfecture de Niigata, au Japon, sous le nom de Fujitora. L'histoire des couteaux TOJIRO a débuté avec un couteau à fruits en acier inoxydable. À cette époque, les lames en acier inoxydable étaient considérées comme moins tranchantes au Japon que celles en acier au carbone. TOJIRO s'est donc concentré sur les propriétés de coupe des couteaux, créant ainsi son slogan « Plus qu'un simple tranchant ».

En 2000, la marque a officiellement changé de nom pour devenir Tojiro, se concentrant ainsi sur la production de couteaux de cuisine de classe mondiale. Implantée dans une région historiquement importante pour la métallurgie, TOJIRO valorise la tradition. L'entreprise allie des technologies ancestrales de forgeage à la main à des méthodes modernes de traitement de l'acier. Par exemple, la méthode DP (prévention de la décarburation) empêche la perte de carbone lors du traitement thermique, préservant ainsi la dureté de la lame (60-61 HRC).

L'usine TOJIRO allie également savoir-faire artisanal et processus de contrôle qualité automatisés. Chaque couteau passe par des dizaines d'étapes : du forgeage et de la trempe à l'affûtage et au polissage manuels. Des aciers au carbone et multicouches haute technologie sont utilisés pour la production, notamment le populaire VG-10, qui conserve parfaitement son tranchant.
