Ittetsu Honesuki Messer mit 15 cm langer Klinge. Honesuki wurde speziell zum Entbeinen und Zerlegen von Geflügel entwickelt, eignet sich aber auch zum Filetieren von Fisch oder Fleisch und für viele weitere Aufgaben. Die Klinge besteht aus Aogami-2-Stahl. Dieser ähnelt dem weißen Papierstahl, enthält jedoch Wolfram und Chrom, was die Schnitthaltigkeit verbessert und Rostbildung verlangsamt. Der Stahl wurde anschließend auf 62–63 Rockwell gehärtet und zur weiteren Pflege mit Edelstahl ummantelt. Der Griff besteht aus Walnussholz. Ittetsu-Messer werden in Handarbeit in Echizen, Japan, hergestellt. Handwäsche mit warmem Wasser und anschließendes Trocknen mit einem Handtuch.

This is the philosophy behind the wooden magnetic knife rack from Noyer. The dark walnut wood brings a warmth to your kitchen and is a nice contrast to the often basic and neutral colors, and stringent lines of modern kitchens.
The rack holds a minimum of 5 knives. All the magnets are cut from a piece of wood of the mentioned length, but since all the magnets are made by hand and otherwise are different from each other, the length can also vary by 2 – 3 centimetres. Length: 37-40 cm, width: 7-9 cm, depth: 3 cm.
For each individual knife, there are five small neodymium magnets, which ensure that the knife does not hang and “dangle” around a single magnet.

Die universale breite Droppoint-Klinge mit hoch angesetztem Saber-Grind ist seit jeher die bevorzugte Form des Jägers für Hoch- und Niederwild und eignet sich außerdem sowohl für feine Aufgaben wie das Stöckefedern als auch fürs Grobe wie das obligatorische Batoning. Der Erl ist durchgängig und ragt einige Millimeter aus dem Griffende. Das sorgt für das Maximum an Stabilität und die Angel verträgt auch kräftige Schläge mit einem Rundholz oder anderem Gegenstand. Ein kurzer Teil des Klingenrückens bildet beidseitig scharfe 90°-Kanten zum Funken schlagen aus dem mitgelieferten Feuerstarter. Als Griffmaterial wurde TPE thermoplastisches Elastomer gewählt, das den Erl vollständig umschließt und mit einer in jede Belastungsrichtung griffigen Struktur versehen ist. TPE ist widerstandsfähig, elastisch, rutschfest und hat eine geringe Wärmeleitfähigkeit. Das Messer liegt also bei allen Witterungs- und Arbeitsbedingungen sicher in der Hand und zieht bei Nässe und Kälte die Kraft nicht aus den Fingern.
