Mit dem Austernmesser von Laguiole en Aubrac lassen sich Austern stilgerecht öffnen, präsentieren und servieren. Die Klinge ist kurz und kräftig. So lässt sich selbst die hartnäckigste Auster bei gekonntem Gebrauch öffnen. Jedes Messer ist mit der obligatorischen Biene verziert und prägt das praktische Werkzeug, neben einer hübsches Verzierung, mit dem Erkennungszeichen der Quälitsschmiede von Laguiole en Aubrac. Das Messer hat das ideale Gewicht (ca. 140 Gramm) und liegt perfekt ausgewogen in der Hand. Es hat eine ideal geformte Klinge, die man für die sogenannte französische Technik der seitlichen Muskeldurchtrennung verwendet. Sie führen das Messer mit der Klingenspitze seitlich am Kopf in die Auster, durchtrennen den Muskel und führen anschließend die Klinge entlang der oberen Schale vorsichtig zu sich (zum "Scharnier"). Die Auster öffnet sich nach der Muskeldurchtrennung ganz einfach von selbst und ist verzehrbereit.
