Le Shirogami est un acier à haute teneur en carbone produit par Hitachi Metals Corporation. Traduit littéralement, «shiro gami» signifie «livre blanc». L'acier doit son nom à la couleur de l'emballage dans lequel le fabricant l'emballe. Le Shirogami est l'un des meilleurs aciers pour la fabrication de couteaux de cuisine japonais. Les couteaux Shirogami ne résistent pas à la corrosion. Il est interdit de laver les couteaux japonais en acier Shirogami « Papier blanc » au lave-vaisselle.
