Le fondateur et cerveau derrière Amare Knives est le forgeron en damas et designer de couteaux Ulrich Hennicke. La passion d'Ulrich pour les lames finement travaillées et la conception de couteaux inhabituels brûle depuis qu'il a appris les bases de la forge auprès du célèbre artisan Hermann Gradinger en 1995. Après avoir travaillé pendant de nombreuses années en tant que forgeron en damas, artisan forgeron et professeur de forge, Ulrich Hennicke a fondé la Hohenmoorer Messermanufaktur en 2012. L'objectif de cette entreprise est la production de couteaux de chef de haute qualité, de haute précision et faits à la main en acier monobloc, en acier à trois couches et en acier damas.
