Les couteaux de cuisine japonais en acier au carbone ont un tranchant très fin et tranchant. Ces couteaux peuvent être affûtés jusqu’au tranchant d’un rasoir. Les aciers au carbone japonais les plus populaires et de haute qualité sont l'Aogami (« papier bleu ») et le Shirogami (« papier blanc »). Les deux aciers sont de très haute qualité et conviennent à la fabrication de couteaux de cuisine. Le Shirogami est plus facile à aiguiser jusqu'à obtenir une pointe très pointue, mais il est plus fragile et sensible à la rouille.
