Both steels are of very high quality and are suitable for the production of kitchen knives. Shirogami is easier to sharpen to a very sharp point, but is more fragile and susceptible to rust. Tungsten, which is part of Aogami steel, solves these problems, making the blades of Japanese kitchen knives more durable.
