Les couteaux de cuisine japonais en acier au carbone ont un tranchant très fin et tranchant. Ces couteaux peuvent être affûtés jusqu’au tranchant d’un rasoir. Les aciers au carbone japonais les plus populaires et de haute qualité sont l'Aogami (« papier bleu ») et le Shirogami (« papier blanc »).
