Boker Damascus Black chef´s knife combines traditionally Japanese handle made of black pakka wood with razor-sharp blade made of stainless Damascus with 37 layers of steel, characterized by a beautiful grain. The extremely high-impact core of the Damascus blade consists of the high-performance VG-10 steel. The Japanese design of the knife handle with the matted stainless steel clamps gives the line its special character. The secret of this unusual sharpness lies in the material and its processing. The blade consists of 37 layers of Damascus steel. The stainless premium blade steel VG-10 used for the center layer is made in Japan and offers hardness, resilience and a homogeneous crystalline structure.

Nakiri vegetable knife from Ittetsu with 16 cm blade. Nakiri is designed for finely slicing and shredding herbs and vegetables, and thanks to the wide rectangular blade, the pieces are easy to transfer to a plate or pan. The straight cutting edge is used for cutting in a vertical line and allows many different cutting techniques such as julienne or chiffonade. The blade is made of stainless Sandvik 19C27 steel. Handle is black pakka wood. Ittetsu knives are handmade in Echizen city, Japan. Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break. Hand wash with warm water and towel dry.

La hoja Tsuchime forjada a martillo tiene una construcción de hoja revestida. El núcleo de la hoja está hecho de acero especial de cobalto de alta calidad llamado ZA-18 de Aichi Steel Company, intercalado con acero inoxidable AUS-2. Este es el primer cuchillo de cocina que utiliza esta nueva fórmula de acero, el ZA-18.
El Sr. Kawamura explica que Aichi Steel Company ha desarrollado recientemente este ZA-18 para competir o incluso superar al VG-10. Está tratado térmicamente y endurecido en hielo (temple Sub-Zero) hasta alcanzar una dureza Rockwell de HRc 60-61. La composición química del ZA-18 es similar a la del VG-10, pero contiene mayor contenido de carbono (1,20 vs. 1,05), cromo (18 vs. 15,5), molibdeno (1,5 vs. 1,20) y cobalto (1,8 vs. 1,5) para mayor dureza, durabilidad y resistencia a la oxidación. De hecho, antes de que el Sr. Kawamura decidiera usar este acero para la Serie Pro J, lo probó en numerosas ocasiones y demostró su increíble rendimiento y potencial de corte. La tecnología japonesa de la construcción de la hoja con revestimiento también ofrece numerosas ventajas en cuanto a durabilidad y mantenimiento, ya que el acero exterior AUS-2 protege el acero del núcleo y proporciona a la hoja una resistencia extra a la flexión y la rotura, gracias a las diferentes capas de acero de dureza. El mango es de madera de Pakka negra, con un elegante detalle de espaciador de microfibra rojo y refuerzo de acero inoxidable. Mcusta's first higonokami design friction folder is really a spectacular knife! It features the traditional Japanese one hand opening and closing mechanism. It is not a locking blade, but the pressure of the thumb on the blade back prevents it from closing in use. It also has a firm ball bearing detent, keeping the blade in place whether open or closed - similar to how a linerlock keeps a blade closed. Blade lenght is 83 mm.
