Single bevel Japanese knives

Single bevel knives are traditionally used in Japan for slicing fish and for the separation of meat from bone. The most popular single bevel Japanese knives are Yanagiba, Deba and Usuba. Pay attention that standart roller sharpeners cannot be used to sharpen Japanese kitchen knives. We recommend using Japanese whetstones for sharpening such knives.
