Description
Güde Alpha Bread knife with pear wood handle and 32 cm blade. Designed by Franz Güde. The Alpha Series knives begin as a single piece of specially alloyed Chrome-Vanadium-Moly cutlery steel. Each knife is hand forged and continues through more than thirty separate steps in the production process before completion. Pear trees are deciduous trees, which have their distribution range in North-Africa, Europe and West-Asia over Persia and the Himalayas as far as Japan. Pear wood is hard, heavy and tough. It does not crack and is very dimensionally stable. The stability is related to the wood's so-called stone cells. They make it very dense and fine. The pear hardly has any visible annual rings in contrast to other tree varieties.

I deducted 1 star for quality because even though it is very sharp, I still had to saw many times to get through the bottom crust of a crusty sourdough boule. Otherwise, it is a beautiful knife and the craftsmanship is unimpeachable. The 12.5 inch (32 cm) blade makes it easier to slice even slices because the blade never gets lost in the bread while slicing. Also, I found that the above-average depth of the blade essentially makes the knife an offset knife with all the associated advantages. Plus, when the knife finished sawing through the tough bottom crust, the blade just dropped onto my cutting board. Unlike other knives, it did not cut into the board. This bodes well for sharpness longevity and should minimize any burrs from developing.I deducted one star for value because it is not inexpensive.Overall, I was a little disappointed that this knife still required a lot of effort to get through the bottom crust, although I was not entirely surprised considering it has an ~HRC = 56.
