Dragon by Apogee is an American brand of kitchen knives created with the goal of combining Japanese craftsmanship with American engineering standards. The founder of the brand, Jason Williams, wanted to create a knife that would combine the sharpness of a traditional Japanese knife with the durability required for a professional kitchen.
The main feature of Dragon knives is the use of American high-carbon steel BD1N, hardened to 63 HRC. This steel has excellent edge retention and corrosion resistance. Most knives are equipped with G10 handles.
The Dragon by Apogee line includes universal models: chef's knives, santoku, slicing knives, vegetable knives and others. These knives are made in Japan.
