Das Funayuki DN-11211 Messer wurde von Daisuke Nishida geschmiedet und ist eines der großartigsten und prächtigsten Beispiele japanischer Messer. Funayuki wurde ursprünglich von Fischern zur Zubereitung von Mahlzeiten auf See verwendet. Dies ist ein Universalmesser, mit dem sie gleichermaßen mittelgroße Fische schlachten, Filets zerlegen und Gemüse schneiden können. Funayuki kombiniert das Aussehen einer Deba, eines Nakiri und eines Yanagiba. Die Klinge 165 mm besteht aus Kohlenstoffstahl Shirogami Nr. 1 durch Schmiedeschweißen mit schwarzer Beschichtung. Der Daisuke Nishida Funayuki hat einen achteckigen Walnussgriff mit einem Ahornring. Die bolster besteht aus Makassar-Ebenholz. Dieses Messer kann nicht in der Spülmaschine gewaschen werden. Japanische Küchenmesser haben eine sehr harte, aber dünne Klinge. Japanische Messer dürfen weder Knochen noch Fleisch mit Knochen, Kokosnüsse und andere Nüsse sowie andere harte Lebensmittel schneiden.
