The knife is generally used in the Tokyo area of Japan as a octopus slicer, but the knife can be used to fillet and medium sized fish. Tojiro was founded in 1955 in Tsubame-Sanjo, Niigata Prefecture, Japan as Fujitora. The history of TOJIRO knives began with a stainless steel fruit knife. At that time, stainless steel blades were considered not sharp enough in Japan compared to carbon steel. Therefore, TOJIRO focused on the cutting properties of knives, making their slogan “More than just sharpness”.

In 2000, the brand officially changed its name to Tojiro, focusing on the production of world-class kitchen knives. Since the factory is located in a region that has historically been a center of metalworking, TOJIRO values ​​​​tradition.
