Le couteau de chef Seki Kanetsugu Gyuto est adapté à un usage professionnel. Sa lame de 180 mm est fabriquée en acier inoxydable à haute teneur en carbone et alliage de molybdène, avec l'affûtage traditionnel « Hamaguri ba » (tranchant convexe), qui a rendu les sabres japonais célèbres pour leur tranchant et leur durabilité exceptionnels, ainsi que pour leur facilité d'affûtage. La lame est traitée thermiquement puis durcie à des températures négatives. Les couteaux de cuisine japonais Seki Kanetsugu Pro S sont dotés d'un manche creux en acier inoxydable. Ce manche présente un motif traditionnel de katana (ce motif le rend également antidérapant) et une forme arrondie confortable. L'avantage d'un manche en acier inoxydable réside dans son hygiène, son intégrité et sa durabilité : il ne rétrécit pas, contrairement à un manche en bois.
