Custom Yanagi knife 27 sm. Handmade by Mr. Hideo Kitaoka. Aogami steel 2 layers. Magnolia-wood handle. Blade is sharpened on one side. A Yanagi is the iconic sushi and sashimi knife. Although it is mainly used for the preparation of fish, it can be used on all types of food.

Hideo Kitaoka

Hideo Kitaoka has been creating traditional Japanese single-edged kitchen knives for decades. Hideo-san is a third-generation blacksmith. He began his apprenticeship with his father in the 1970s and has since dedicated his life to creating handmade kitchen knives and preserving the traditional blacksmithing craft. He is one of the main masters of Takefu Knife Village, which unites the best artisans of the region.

Hideo Kitaoka is best known for his knives with traditional Japanese single-edged sharpening (kataba), in particular deba, unakita and yanagiba, created in the spirit of classic kaiseki knives. The master prefers to use Shirogami carbon steel (White #2 and #1).

Each knife from Hideo Kitaoka is not just a tool, but a piece of art and a continuation of a tradition passed down in his family from generation to generation. Master Kitaoka is the founder and vice-chairman of the Takefu Knife Village blacksmith association.
