The Japanese kitchen knife Ittetsu Uraoshi Usuba is designed for slicing vegetables. The knife has a blade length of 180 mm. The oval handle is made of magnolia wood. The blade is made of Shirogami #2 carbon steel. Carbon steel is subject to oxidation, so the knife should be kept dry and clean. Only hand washing in warm water with mandatory wiping dry is allowed. Ittetsu knives are handmade in Echizen, Fukui Prefecture, Japan.
Ittetsu knives are handcrafted in Echizen, Japan by various master smiths. Most Ittetsu Japanese kitchen knives feature a triple-layer steel blade with an inner layer of Shirogami steel and are hardened to approximately 60 HRC.
