Tojiro was founded in 1955 in Tsubame-Sanjo, Niigata Prefecture, Japan as Fujitora. The history of TOJIRO knives began with a stainless steel fruit knife. At that time, stainless steel blades were considered not sharp enough in Japan compared to carbon steel. Therefore, TOJIRO focused on the cutting properties of knives, making their slogan “More than just sharpness”.

In 2000, the brand officially changed its name to Tojiro, focusing on the production of world-class kitchen knives. Since the factory is located in a region that has historically been a center of metalworking, TOJIRO values ​​​​tradition. The company combines ancient hand-forging technologies with modern steel processing methods. For example, the DP (Decarburization Prevention) method prevents carbon loss during heat treatment, maintaining the hardness of the blade (60-61 HRC).

The TOJIRO factory itself also combines handcrafted craftsmanship with automated quality control processes. Each knife goes through dozens of stages: from forging and hardening to manual sharpening and polishing. Both carbon and high-tech multilayer steels are used in production, including the popular VG-10, which holds an edge perfectly.
