Les couteaux en acier VG10 résistent à la corrosion et restent tranchants pendant longtemps. VG - 10 (abréviation de V-Gold No. 10) est un acier à haute teneur en carbone allié au cobalt et au molybdène. Le VG-10 a été spécialement développé par Takefu Special Steel Co., Ltd. pour la production de couteaux. Initialement, seuls les couteaux de cuisine étaient en acier VG10, cependant, en raison des excellentes qualités de l'acier, de nombreuses marques ont commencé à l'utiliser également pour la fabrication de couteaux pliants et de couteaux à lame fixe.
