Choosing a new knife for kitchen, pay attention on steel and handle materials. For example, cooking knife made of carbon steel will stay sharp longer, than knife made of stainless steel, but it will require more care. Choosing between Japanese and European kitchen knife, remember that Japanese knives are lighter in weight, and also have an another  sharpening angle. If the cook knife can be washed in the dishwasher, this will be written on the product packaging. However, we do not recommend washing any knives in the dishwasher, as this makes them blunt, and the handle material gets damages.

Folding & Pocket Knives

A knife has been an essential tool in everyday life since ancient times. Folding knives appeared over two thousand years ago. Often, a pocket knife is much more convenient and practical than a knife with a fixed blade. Today, folding knives vary greatly in functionality.

Types of folding knives

Depending on your needs, you can choose a folding knife with a serrated blade, a rescue knife, an elegant pocket knife, a trapper, or a balisong. All these types are very famous and can be used as utility knife. There are also special types of pocket knives like folding karambit knife or traditional Japanese folding knife. There are several popular types of blade profiles for folding knives. Drop Point, derived from the English word "drop," is one of the most common blade profiles. It has a descending blade line towards the tip. The Clip Point profile is similar to Drop Point, but the upper part of the blade is cut straight closer to the tip. This profile is also versatile. The Spear Point blade, as the name suggests, has a spear-like shape. In recent years, pocket knives with a "tanto" blade profile have also become popular. Another less common type is the Wharncliffe Point – a blade with a straight edge and a curved spine. This type of blade is suitable for precise straight cuts, making it convenient for carving, opening packages, or letters. The Sheepfoot blade, named for its resemblance to a sheep's hoof, lacks a piercing point, making it safe.

Locking mechanisms on folding knives

In our store, you can buy folding knives with various locking mechanisms. Slip joint is the simplest type of lock. This lock is structurally simple, has a small thickness, and allows for the creation of multi-blade or multi-tool knife designs. It is a reliable but not very durable locking mechanism (it relies solely on spring resistance). Therefore, knives with this type of lock are not suitable for heavy-duty work. Backlock is essentially derived from SlipJoint. This lock is lever-based, with a spring-loaded lever on the back of the handle that needs to be pressed to fold or unfold the knife. Liner lock is one of the most commonly used mechanisms. A liner plate is used as the locking mechanism, pressing against the blade tang when opened. Frame lock operates on the same principle, but the locking part is a section of the handle. The advantages of these locks include high reliability. In our store, you can also buy folding knives with various lock types: button lock, tri-ad lock, compression lock, viroblock, axis lock, and others. The lock type is specified in the technical specifications on the page of each product.

Most folding knives come with a pocket clip for convenient carrying. Usually, a sheath is not included with a folding knife, but you can purchase one separately in the corresponding section of our store.

Shaving

Our selection or razors includes straight razors, safety razors, strops, mugs, brushes, blades and more. Razors have been identified from many Bronze Age cultures. These were made of bronze or obsidian and were generally oval in shape, with a small tang protruding from one of the short ends. Straight razors with open steel blades, also commonly known as cut-throats, were the most commonly used razors before the 20th century. The first safety razor protected the skin from all but the very edge of the blade and was invented in 1762 by a Frenchman, Jean-Jacques Perret, who was inspired by the joiner's plane. Perret's design was essentially a straight razor with its blade surrounded by a wooden sleeve.

Sharpening

Even a knife made of the best steel always requires proper sharpening. In our range you will find tools for sharpening already blunted knives, as well as for constantly maintaining the working condition of the cutting edge. The frequency of sharpening depends on how often you use the knife, as well as on the properties of the steel. For example, carbon steel knives keep sharpening longer. When choosing sharpening tools, pay attention to the sharpening angle. So, standard European sharpeners are not suitable for Japanese knives, since the sharpening angle of Japanese knives is less and is about 15 degrees, while European knives are 20 degrees. For sharpening Japanese knives, we recommend using sharpeners from Japanese manufacturers, whetstones or musats. Musats are also the optimal universal sharpening tool for any knives. In our store you can buy musats, electric sharpeners, kitchen knife sharpeners, hiking sharpeners, grindstones online. Paring Kitchen knife Miyabi 5000FCD RAW Shotoh 11cm 34680-111-0
Zwilling Miyabi 5000FCD Shotoh paring knife 11 cm is ideal for cutting, cleaning and peeling fruit and vegetables. Shotoh has a hard fine carbide steel core which gives very good cutting edge retention and sharpness. The FC61 steel core of the blade is embedded in 48 outer layers of Damascus-design steel, giving each knife its unique pattern. The cutting edge is symmetrical (not single bevel) so it’s suitable for both right and left-handed use. The edge is Honbazuke-honed – a three-stage grinding, sharpening and polishing process resulting in razor-like sharpness. There is no finger guard so the whole length of the cutting edge can be used. The pakka wood handle seamlessly joins the half-bolster. The smooth join helps to prevent calluses forming on the thumb and forefinger. For best care, it’s recommended to hand wash only. Maintain and sharpen on a whetstone, and using glass, ceramic or stone cutting boards should be avoided as this can prematurely dull the cutting edge. The GYUTOH measuring 16 cm in length has a smooth, pointed blade which makes the knife well suited to cutting and slicing fish and meat. Large vegetables are also no problem. Miyabi paid attention to making an authentic Japanese blade profile that makes the knife extremely hard and sharp. The cutting qualities are completed by the Pakka wood handle which is comfortable to hold. The blade is manufactured from micro-carbide powder steel which is embedded between two other layers of steel. The blade is hardened even further using a special procedure such as ice-hardening at -196 degrees Celsius in order to achieve extremely high levels of hardness and sharpness. The blade has been ground on both sides and finished using the Honbazuke blade-honing technique. It is also very aesthetically pleasing thanks to the Tsuchime design which looks like the surface has been hammered. Kitchen knife Seki Kanetsugu Pro J 20cm 6005
After yers of research for the ultimate performance kitchen knives in functional materials and design, Mr. Kawamura of Kanetsugu has released the innovative line of Pro J Series. Hammer Forged Tsuchime Blade has cladding blade construction. Blade core is made of special high grade Cobalt steel called ZA-18 from Aichi Steel Company, sandwiched with AUS-2 stainless steel. This is the first kitchen knife to use this new formula steel of ZA-18. Mr. Kawamura explains Aichi Steel Ccompany has recently developed this ZA-18 to compete or even outperform VG-10. It is heat treated and then ice hardened (Sub-Zero quench) to the Rockwell hardness of HRc. 60-61. The Chemical Composition of ZA-18 is similar to the VG-10, but contains higher Carbon (1.20 vs. 1.05), Chromium (18.0 vs. 15.5), Molybdenum (1.50 vs. 1.20) and Cobalt (1.80 vs. 1.5) for added hardness, durability and rust-resistance. In fact, before Mr. Kawamura decides to use this steel for Pro J Series, he has tested it many times and proved it's incredible cutting performance and potential. Japanese technology of the cladding blade construction also has many advantages in the durability and maintenance, because the AUS-2 outer steel protects the core steel, and makes the blade extra strong to bending and breaking for the different hardness steel layers. The handle is made of Black-Pakkawood handle, comes with nice accent of red color micro fiber spacer and stainless steel bolster. It is ergonomically designed with slightly slanted bolster forge welded into the tang and full tang hand rounded handle slab to fit with your hand.
