Japanese chef knife gyuto hand forged by Yoshimi Kato who is a certified traditional craftsman in Takefu, Fukui prefecture in Japan. Blade VG-10 Nickel Damascus. Blade length 240 mm. Handle - rosewood. Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break. Hand wash with warm water and towel dry.

Yoshimi Kato is the son-in-law of Hiroshi Kato, the man who originally was a founding member of Takefu Knife VIllage. Yoshimi Kato is a renowned blacksmith in Fukui Prefecture. In pursuit of forging technology, he has followed his father Hiroshi Kato for years making every effort to produce sharp and easy-to-use knives, before taking over the family business. His knives are highly valued in Japan.
