Description

 Usuba knife by Ittetsu has 165 mm forge-welded blade made of Shirogami #2 carbon steel. Weight is 310 g. Usuba is a traditional Japanese knife for slicing vegetables. Unlike nakiri, usuba is a single-beveled knife. The oval shaped handle is made of magnolia wood. Carbon steel is susceptible to rust and must be kept dry and clean at all time’s to avoid oxidation and discoloration. Hand wash with warm water and towel dry. Ittetsu knives are handmade in Echizen city, Japan.

Ittetsu

Ittetsu knives are handcrafted in Echizen, Japan by various master blacksmiths. The knife blades are made of three-layer steel with an inner layer of Shirogi and are hardened to approximately 60 HRC. The octagonal grips are made of walnut and equipped with a pakka wood clip. The Kurouchi finish makes the knives look classically Japanese and a little more rustic. The sharpness and stability of the blade is excellent, so the good value for money of these high quality knives should be emphasized.
