Ittetsu Usuba knife with a blade length of 165 mm. Usuba is a knife with single-sided sharpening, designed for slicing and shredding vegetables. The blade is made of Shirogami #2 carbon steel. The weight of the knife is 310 g. The oval wa handle is made of magnolia wood. Carbon steel is subject to corrosion, so the knife must be kept dry and clean. Only hand washing in warm water with mandatory wiping dry is allowed. Ittetsu knives are handcrafted in the city of Echizen, Fukui Prefecture, Japan.
