The petty knife with a blade length of 15 cm is handcrafted by Mutsumi Hinoura. Ideal for cutting vegetables and meat that are too small for a Chef’s knife. Blade of this petty knife is made of Shirogami #2 iron clad steel. The ergonomic handle is made of oak. This knife is not allowed to wash by dishwasher. Japanese kitchen knives have very hard, but thin blade. It is not allowed to cut by japanese chef knives bones and meat with bones, coconuts and other nuts, other hard products. Weight 155 gr.

Mutsumi Hinoura is a Japanese knife brand founded by the fourth-generation blacksmith of the same name from Sanjo City, Niigata Prefecture. Mutsumi trained under his father, Tsukasa Hinoura, who is a legend in the world of Japanese knives. The brand is famous for preserving age-old traditions such as hand forging.
Mutsumi Hinoura knives are made from high-quality steels such as Aogami Super (blue steel) and Shirogami #2 (white steel #2). The blades are often created using the Honyaki process (hardening a single piece of steel), which requires precise control of the temperature and cooling process. This results in a visible temper line, which is not only a marker of quality but also adds aesthetic value. Mutsumi Hinoura offers a wide range of kitchen knives, including the Gyuto (chef's knife), Santoku (utility knife), Nakiri (vegetable knife).
