Motokyuuichi santoku knife has 165 mm blade made of Shirogami 2 steel with iron clad. Oval chestnut handle. It's recommended to hand wash only, maintain and sharpen on a whetstone and using glass, ceramic or stone cutting boards should be avoided. Handcrafted in Shimabara City, Nagasaki Prefecture, Japan.

Motokyuuichi knives are hand forged by 4th and 5th generation blacksmiths of the Maeda family. The original Kyuuichi family were well renowned swordsmiths during the Edo period, but their lineage gradually disappeared from the sword making craft. In 1895 Motokyuuichi was taken over by swordsmith Shoujirou Maeda who founded the current workshop and applied his skill set to focus on forging harvesting tools, kitchen, hunting and craft knives.
