Das traditionelle japanische Allzweckmesser. Wörtlich übersetzt bedeutet "San-Toku": „Drei Tugenden“. Hier ist Gemüse, Fisch und Fleisch gemeint. Mit diesem Messer kann man fast alle in der Küche anfallenden Schneidarbeiten verrichten. Das Messer ist durch die begrenzte Länge von ca. 17cm sehr kompakt und handlich. In feinen Schichten wechseln sich harter und weicher Stahl mit unterschiedlichem Anteil an Kohlenstoff ab. Die Kernschicht ist aus extrem hartem, mit Cobalt legiertem Kohlenstoffstahl (VG-10 Stahl). Aufgrund seiner hohen Klingengeometrie kann es zusätzlich als Palette benutzt werden.
