Das traditionelle Santoku Messer Tojiro VG10 Hammered F-1112 ist das beliebteste Messer in Japan. Wörtlich übersetzt bedeutet "San-Toku" Die Drei Tugenden. Hier ist Gemüse, Fisch und Fleisch gemeint. Mit diesem Messer kann man fast alle in der Küche anfallenden Schneidarbeiten verrichten. Die breite Klinge sorgt für eine spielend einfache Handhabung und kann auch als Palette benutzt werden. Die Klinge besteht aus einem 3 Lagen Stahl mit einer harten VG-10 Kernlage (60 HRC), die wiederum für die langanhaltende Schärfe (Schnitthaltigkeit) verantwortlich ist. Die äußeren Schichten bestehen aus rostfreiem, mit 13% Chrom legiertem Stahl welche mit einem dekorativen Hammerschlag-Finish (Tsuchime) und der Schmiedehaut (Kuro-uchi) veredelt wurden. Dieser weichere Stahl schützt die harte Kernschicht. Dies ergibt einen Verbundstahl mit hoher Widerstandsfähigkeit und lang anhaltender Schärfe. Dazu ist VG10 Stahl relativ leicht zu schleifen.Die Kastanienform des Griffes macht ihn auch für europäische Hände besonders ergonomisch. Der Griff wird aus japanischer Magnolie gefertigt.

Yu Kurosaki Santoku ist das japanische Allzweckmesser. Es eignet sich hervorragend zum Schneiden von Fisch, Fleisch und Gemüse. Aufgrund seiner hohen Klingengeometrie kann es zusätzlich als Palette benutzt werden.
