Yu Kurosaki Fujin: The Art of the Wind
The Fujin series of knives by Japanese blacksmith Yu Kurosaki is a fascinating combination of traditional Japanese craftsmanship and avant-garde design. Named after the god of wind (Fujin), these knives have a distinctive textured finish that imitates thunderclouds. This pattern is achieved using the signature tsuchime forging technique. Kurosaki uses different patterns for different series. Each blade of the Fujin series knives is hand forged. Kurosaki uses different steels: Aogami Super (Blue Paper Steel), R2 powder steel and the popular VG10 - a high-carbon steel that is resistant to corrosion. A special Damascus coating on VG10 steel knives not only improves aesthetics, but also provides even greater resistance to rust.
Kurosaki's Fujin knives are renowned for their light weight and razor-thin edges, making them ideal for precision tasks such as slicing sashimi or thinly sliced vegetables. The blades usually have a hardness of 62-64 HRC, which ensures durability without brittleness. The series includes popular types of Japanese kitchen knives such as Gyuto (chef's knife), universal Bunka and Santoku, vegetable knife and small kitchen work Petty.
Master Yu Kurosaki uses different handles during production. Therefore, knives of the same series may have different handles depending on the time of manufacture and the batch of knives.
