Powdered high speed steel is made of processed high speed steel that is extremely hard and usually used for cutting metals. It processed by the way called Powder metallurgy (injecting into a mold and harden by rapid heating), which is one of the most superior method to refine metals. The atoms are uniformly in lines and the material is very minute. Blade made by being gathered the best advanced modern technology must provide you an amazing keenness and its sustainability, which may be the longest in Japanese knife industry. The keenness lasts much longer than you think and it is ultimate blade.
Tojiro was founded in 1955 in Tsubame-Sanjo, Niigata Prefecture, Japan as Fujitora. The history of TOJIRO knives began with a stainless steel fruit knife. At that time, stainless steel blades were considered not sharp enough in Japan compared to carbon steel. Therefore, TOJIRO focused on the cutting properties of knives, making their slogan “More than just sharpness”.
In 2000, the brand officially changed its name to Tojiro, focusing on the production of world-class kitchen knives. Since the factory is located in a region that has historically been a center of metalworking, TOJIRO values tradition. The company combines ancient hand-forging technologies with modern steel processing methods. For example, the DP (Decarburization Prevention) method prevents carbon loss during heat treatment, maintaining the hardness of the blade (60-61 HRC).
The TOJIRO factory itself also combines handcrafted craftsmanship with automated quality control processes. Each knife goes through dozens of stages: from forging and hardening to manual sharpening and polishing. Both carbon and high-tech multilayer steels are used in production, including the popular VG-10, which holds an edge perfectly. Our exclusive film about the Tojiro factory in Japan is available on the MyGoodKnife YouTube channel. You can see with your own eyes how Tojiro knives are created and see how blacksmiths create blades by hand, as well as the sharpening and polishing process.
Our assortment includes both classic TOJIRO series - DP, Basic, Shippu, Zen, Damascus Flash and others, as well as new ones - Sakuya, Reppu. Each series of knives includes the most popular models: chef's knife gyuto, santoku, nakiri, vegetable and utility knives. TOJIRO also produces classic Japanese knives with single-sided sharpening for sushi and sashimi, fish cutting.
TOJIRO also produces high-quality sharpening stones and accessories, including sharpening angle stabilizers and combined stones for finishing and basic sharpening. This ensures that the knife will serve you for decades with proper care.
