Cuchillos de carbono

Los cuchillos de cocina de acero al carbono son apreciados por chefs y aficionados a la cocina por su excepcional filo y facilidad de afilado. El acero al carbono, con el que se fabrican los cuchillos de cocina, suele contener entre un 0,5 % y un 1,5 % de carbono.

Entre los aceros al carbono más conocidos, destacan el Shirogami (acero blanco) y el Aogami (acero azul) japoneses, así como los europeos y americanos 440C, 1095 y 1055.

Una de las principales ventajas de los cuchillos de acero al carbono es su capacidad para lograr un filo ultrafino. Además, son muy fáciles de afilar, especialmente con piedras de afilar. Puede adquirir varios afiladores, incluyendo piedras de agua, en nuestra tienda.

Sin embargo, los cuchillos de cocina de acero al carbono requieren un cuidado especial, ya que son propensos a la corrosión. Después de cada uso, la hoja debe lavarse a mano y secarse con un paño. En caso de contacto con alimentos ácidos (limón, tomate), enjuague inmediatamente. La exposición prolongada a la humedad provoca oxidación. Los cuchillos de acero al carbono no se pueden lavar en el lavavajillas. Tenga en cuenta que el óxido en un cuchillo de acero al carbono no cubre la garantía. A menudo, estos cuchillos presentan pátina. Esto no es óxido.

La pátina es una capa de óxido que protege el metal de la corrosión. A diferencia del óxido, la pátina es densa y estable, y no destruye el metal. La pátina aparece como resultado de la oxidación del hierro al entrar en contacto con la humedad y sustancias ácidas. El color de la pátina puede variar desde gris claro hasta azul oscuro o incluso negro.
