Takeshi Saji, forgeron traditionnel et maître artisan, est né à Takefu en 1948, une ville célèbre pour sa tradition vieille de 700 ans dans la production d'Echizen Uchi-Hamono. Après avoir terminé l'école secondaire, Takeshi a passé trois ans à l'école locale de formation de forgeron, où il a appris les processus de forgeage de base et les techniques de forgeron. À l'âge de 18 ans, il a commencé à fabriquer des couteaux sous la supervision stricte de son maître et père, Harukichi Saji, le forgeron de deuxième génération. À l'âge de 30 ans, son maître lui a annoncé qu'il ne pouvait plus lui apprendre grand-chose et qu'il serait autorisé à fabriquer ses propres couteaux, le reconnaissant ainsi comme le forgeron de troisième génération. En 1992, il a été officiellement certifié en tant que "Maître Artisan Traditionnel" (Dentoukougeishi) par le ministère japonais de l'Économie, du Commerce et de l'Industrie.
