Yu Kurosaki (黒崎優) è uno dei fabbri giapponesi moderni più famosi e apprezzati. Ha ricevuto numerosi premi per i suoi coltelli da cucina. Yu Kurosaki ha iniziato a produrre coltelli da adolescente. Dall'età di 23 anni è stato apprendista del famoso maestro Hiroshi Kato.

Nel 2014, Kurosaki ha aperto il suo laboratorio. Le sue abilità uniche nella fabbricazione di coltelli, unite a un approccio innovativo, gli hanno fatto guadagnare riconoscimenti sia in Giappone che all'estero. Il laboratorio di Yu Kurosaki si trova nella città di Echizen, uno storico centro di produzione di coltelli. Yu Kurosaki si distingue in particolare per la sua maestria nella finitura Tsuchime.
