Das Tojiro VG10 Hammered Petty F-1111 ein kleines Allzweckmesser für die kleinen und feinen Schneidarbeiten in der Küche! Die  Klinge besteht aus einem 3 Lagen Stahl mit einer harten VG-10 Kernlage (60 HRC), die wiederum für die langanhaltende Schärfe (Schnitthaltigkeit) verantwortlich ist. Die äußeren Schichten bestehen aus rostfreiem, mit 13% Chrom legiertem Stahl welche mit einem dekorativen Hammerschlag-Finish (Tsuchime) und der Schmiedehaut (Kuro-uchi) veredelt wurden. Dies sorgt für ausreichend Flexibilität und vor allem dafür, dass das Messer auch für weniger Geübte mit einem Schleifstein nachgeschärft werden kann.
Beim Aogami Stahl handelt es sich um einen der hochwertigsten und härtesten Stähle, der zum Schmieden Japanischer Messer verwendet wird. Durch die Härte des Aogami Stahls an der Schneidkante hält die Schneide ihre Schärfe besonders lange.
Tojiro Aogami Messer sind einseitig angeschliffen und mit einem Hohlschliff versehen. Der Hohlschliff verhindert, dass das Schneidgut an der Klinge haften bleibt - die Messer gleiten förmlich durch das Schnittgut.
