Japanisches Küchenmesser Ittetsu Kaisaki IJS-11154 mit 120 mm langer Klinge aus Shirogami #2 Kohlenstoffstahl. Das Kaisaki ist ein kleines, traditionelles japanisches Allzweckmesser mit einseitigem Anschliff, das einem kleinen Yanagiba ähnelt und zum Filetieren von kleinen Fischen und Schalentieren, zum Schälen und Schneiden von Gemüse sowie zum Ausnehmen und Schneiden von kleinen Fleischstücken verwendet werden kann. Der ovale Griff besteht aus Magnolienholz. Kohlenstoffstahl ist rostanfällig und muss stets trocken und sauber gehalten werden, um Oxidation und Korrosion zu vermeiden. Handwäsche mit warmem Wasser und anschließendes Abtrocknen mit einem Handtuch. Ittetsu-Messer werden in Handarbeit in Echizen, Japan, hergestellt.
