Das Kochmesser ist in Europa die wichtigste Messerform. Das Messer Tojiro DP Cobalt Alloy F-808  ist für viele Schneidaufgaben in der Küche geeignet. Filetieren, Parieren, so gut wie alles ist möglich mit dieser Klingenform. Die Hauptaufgabe des Kochmessers ist aber das Schneiden von Fleisch, Fisch und Gemüse. Mit 210mm Klingenlänge ist es auch für Kochanfänger noch gut zu führen und überzeugt mit seiner enormen Vielseitigkeit. Gerade in diese Klingenlänge ist  für den Heimgebrauch zu empfehlen. Die rostfreie Klinge besteht aus einem 3 Lagen Stahl mit einer harten VG-10 Kernlage mit ca. 60 Rockwell, die wiederum für die langanhaltende Schärfe (Schnitthaltigkeit) verantwortlich ist. Die äußeren Schichten bestehen aus rostfreiem, mit 13% Chrom legiertem Stahl. Dieser weichere Stahl schützt die harte Kernschicht. Dies ergibt einen Verbundstahl, der sehr widerstandsfähig ist. Dazu ist VG10 Stahl relativ einfach nachzuschleifen. Der dünne V-Anschliff verleiht dem Messer eine sehr solide Schärfe. Der hochwertig verarbeitete Griff aus sehr langlebigem und äußerst widerstandsfähigem Micarta (Kunstharzverbund) ist mit einer zusätzlichen Zwinge am Übergang zwischen Griff und Klinge versehen.
