Ginsan Steel Silver #3 Japanese Knives
Ginsan steel (also known as Gin-3, Gingami No. 3, or Silver Steel #3) is a high-carbon stainless steel produced in Japan and developed by Hitachi Metals. The main advantage of Ginsan for kitchen knives is that it combines the cutting performance of carbon steel with the corrosion resistance of stainless steel. Silver Steel #3 holds an edge very well, is easy to sharpen, and does not require as much maintenance as traditional Japanese carbon steels such as Aogami or Shirogami.
Unlike more complex stainless carbon steels such as VG-10 or SG2 (R2), which contain molybdenum, vanadium, and cobalt, Ginsan has a simple and clean composition, consisting mainly of iron, carbon, and chromium. This makes it easy and quick to sharpen. The hardness of Ginsan knives usually ranges from 59–62 HRC, providing good edge retention while being less brittle compared to harder steels.
Ginsan knives are also suitable for professional kitchens thanks to their rust resistance. The steel is also well-suited for forging, which is why many renowned Japanese knife makers, brands, and blacksmiths use it.
