Bunka Kitchen knife Matsubara Hamono Shirogami, stainless clad 17cm KT-614
This bunka knife, produced by Matsubara Hamono (Tanaka Kama Industry), exemplifies Japanese kitchen craftsmanship. The bunka is a small, all-purpose knife with a sharp tip, ideal for a wide range of tasks. Its 17-centimeter blade is forged from Shirogami (White Paper) steel, known for its high carbon content. For protection and aesthetics, the blade is framed with blackened stainless steel sheaths. The ergonomic octagonal "wa" handle is crafted from fine walnut. It should be noted that this knife is not dishwasher safe. High-carbon Shirogami steel requires careful care: hand wash and dry thoroughly immediately after each use. For optimal blade care, we recommend using camellia oil.

Gyuto Kitchen knife Ittetsu Hokiyama Hamono 21cm IWH-108
The 210 mm long Ittetsu Hokiyama Hamono gyuto chef's knife embodies Japanese blacksmithing traditions, adapted for the modern kitchen. The heart of the knife is a forged blade made of Ginsan (Silver Steel) from Hitachi Metals. This high-quality stainless steel combines the sharpness of carbon steel with the practicality of stainless steel, providing excellent edge retention and balanced hardness for daily use. The blade's surface is decorated with a traditional Nashiji pattern—a matte, slightly rough texture reminiscent of pear peel. This not only gives the knife a unique, handmade look, in keeping with the wabi-sabi philosophy, but also prevents food from sticking. The natural walnut wa handle fits perfectly in the hand, providing balance and comfort. Its warmth and elegance harmoniously complete the knife's traditional appearance. Dishwasher safe.
