The Japanese Ittetsu Hokiyama Petty knife with a 15 cm blade is designed for precision kitchen tasks: peeling vegetables and fruit, chopping small ingredients, working with herbs, and delicate slicing. The blade is made of Aogami Super carbon steel, which is characterized by its high hardness and the ability to form a very sharp cutting edge. This steel sharpens easily and retains its sharpness for a long time with proper care. A dark coating reduces the risk of corrosion and reduces food sticking to the blade surface during use. The traditional Japanese wa handle is made of walnut wood and provides a light, balanced grip without undue strain on the hand. Its light weight of approximately 100 g makes the knife especially comfortable for prolonged use. The knife should not be used with frozen foods, bones, or hard materials. To preserve the properties of the steel, hand washing only, followed by immediate drying, is recommended. This helps prevent corrosion and prolongs the life of the blade.
Ittetsu knives are made in Echizen, Japan, one of the key centers of knifemaking in the Land of the Rising Sun. The range includes popular models of traditional Japanese kitchen knives: santoku, nakiri, sujihiki, and gyuto. Most Ittetsu knives feature carbon steel blades and traditional Japanese wa-style handles. These knives have an authentic, slightly rustic look and are perfect for those looking for a classic, simple, and functional Japanese kitchen knife.
