The Japanese Sakai Takayuki Kengata knife has a 16 cm blade. The Kengata is a versatile kitchen knife whose name translates as "sword shape." It features a unique reverse tanto or k-tip, designed for fine slicing, chopping, and precision work. Essentially, it's a more aggressive and stylish version of the Japanese Bunka or Santoku knife. The blade is crafted from high-carbon, yet corrosion-resistant VG10 steel. Additionally, the blade is coated with a black Teflon coating. This prevents food from sticking during chopping and provides additional protection. The upper part of the blade features a hammer-forged texture (tsuchime), giving the knife a stylish, authentic look. The handle is made of wenge wood. Manufactured in Japan by Aoki Hamono Co., Ltd., this knife embodies traditional craftsmanship and modern technology.
