Description

Nakiri 17 cm. Kasumi HM series.  The super hard alloy VG-10 is used as a core material of the blade. This knife has a three-layered structure that holds the core material with corrosion-resistant stainless steel from both sides. Seki’s skilled artisans are responsible for assembling the blade. Hammered Series knives pattern are hammered with many tiny indentation creates air pockets when cutting to prevent food from sticking. Special tempering of the VG10 blade core create an edge retention that far surpasses other brands of similar kitchen knife. The handle is made in POM, material that makes it comfortable, resistant, hygienic and long lasting. There are only best kitchen knives in MyGoodKnife’s range.

Since 1916, SUMIKAMA has been producing high-quality Kasumi knives. In its production, Sumikama uses the almost 800-year-old weapon traditions of the Japanese city of Seki. This city is famous for its centuries-old forging traditions, dating back to the era of the samurai, when local craftsmen made katanas, and later switched to the production of kitchen knives. Kasumi knives combine centuries-old craftsmanship with the latest materials and technologies. The word "kasumi" in Japan refers to the haze on the mountains, which is formed by several layers of clouds. The layers of Damascus steel on the blade visually resemble this haze.

The Kasumi HM (Hammered) series are knives with a forged structure and a characteristic textured surface reminiscent of a hammer finish. This treatment not only decorates the knife, but also reduces the sticking of food to the blade. The blades are made of VG-10 steel with a Damascus coating (32 layers), which guarantees excellent strength and sharpness. The handles are made of polyoxymethylene (POM) - a lightweight, hygienic material resistant to high temperatures.

The Kasumi VG-10 Pro series is designed specifically for the professional kitchen. The blades are made of VG-10 steel without cladding, which ensures maximum wear resistance and sharpness. The Kasumi VG-10 Pro handles are made of an exclusive material - artificial marble. Improved bolster (transition from blade to handle) without joints where dirt can accumulate.
