Description

A sushi and sashimi knife for left-handed use. This Ittetsu yanagiba has a 240 mm blade. The blade is single-edged and made of Shirogami #2 carbon steel. The traditional wa handle is made of magnolia wood. Please note that high-carbon steel is susceptible to corrosion. The knife should be washed immediately after use and dried thoroughly. Ittetsu knives are handcrafted in Echizen, Fukui Prefecture, Japan.
