Santoku Seki Kanetsugu kitchen knife. The blade is made of Molybdenum alloy high carbon stainless steel with traditional "Hamaguri ba" (Convex edge grind), the edge that made Japanese swords famous, for an outstanding sharpness and durability, and yet easy to resharpen.
